Easy Tikka Masala

This is a perfect quick and easy dinner – especially on nights when you’re craving comfort food.


Ingredients:

  • 2 tbsp. of neutral oil

  • ½ tsp cumin seed

  • 2 tbsp. tomato paste or 8oz of canned tomatoes

  • ½ jar PUR Spices Masala Paste (about 4oz)

  • 1 cup water

  • ¼ tsp cayenne pepper, optional

  • ¼ tsp salt (more to taste if needed)

  • 1 block tofu, cubed (can substitute with paneer, chicken or protein of choice)

  • ¼ cup cream (can also use whole milk, yogurt, coconut milk)

  • ¼ tsp sugar (more or less to taste)

  • ½ cup cilantro, optional but recommended


Directions:

Brown tofu (or protein of choice) in pan with about 1 tbs of oil. Remove browned tofu and place on plate while making the sauce.


Add 1 tbs of oil to a saucepan.

Once the pan is warm, add cumin seeds and cook until you hear them begin to sputter.

Carefully add tomato paste (or canned tomatoes) and masala paste and stir consistently until for 2-3 minutes until warm and darker in color.

Slowly add 1 cup water and cook for about 5-7 more minutes on medium low heat as the sauce begins to thicken.

Add cayenne (omit if you prefer it less spicy) and salt.

Add cubed, browned tofu to saucepan and simmer for about 5-7 min.

Stir in sugar and cream.

Simmer for another 3-4 minutes.

Top with finely chopped cilantro if desired.


Serve with basmati rice or naan.
