Recipe by Kristen Soinski, inspired by Eat Yourself Skinny.
Meatballs (can use frozen to save time):
1 lb. lean ground turkey
1/2 cup panko breadcrumbs
1/4 cup green onions, chopped
Minced garlic to taste
Salt + pepper
For the sauce:
1/3 c honey
Original Harissa to taste
2 T sesame seeds
Preheat oven to 375 degrees F.
In a large bowl, mix together meatball ingredients until well combined. Shape into 1 1/2-inch balls (will make about 20 balls) and place on a greased baking sheet.
Bake meatballs for 20 to 25 minutes, or until browned and fully cooked. While baking, mix together sauce ingredients in a small bowl.
Once meatballs are cooked, toss meatballs in Honey Harissa sauce.
Serve over cooked quinoa (or grain of choice) and top with green onions, sesame seeds, and your favorite vegetables for extra color and nutrients.
