In case you're running out of ideas for lunch, this chicken salad is healthy and delicious! Avocado adds creaminess while mint harissa delivers the perfect punch of flavor and spice!
Ingredients:
Salad:
One chicken breast, cooked and shredded (can use thighs as well if preferred)
1 Apple, diced
1 Carrot, shredded
Dressing
1 garlic clove, minced
1 Avocado, mashed
1 tsp Mint Harissa
1 TBS Honey
Juice from 1/2 lime
Salt, to taste
Method:
Add ingredients for dressing into bowl and mix well.
Stir in salad ingredients. Raisins or grapes would be a fantastic addition.
