Mint Harissa Chicken Salad

In case you're running out of ideas for lunch, this chicken salad is healthy and delicious! Avocado adds creaminess while mint harissa delivers the perfect punch of flavor and spice!


Salad:

One chicken breast, cooked and shredded (can use thighs as well if preferred)

1 Apple, diced

1 Carrot, shredded


Dressing

1 garlic clove, minced

1 Avocado, mashed

1 tsp Mint Harissa 

1 TBS Honey

Juice from 1/2 lime 

Salt, to taste


Add ingredients for dressing into bowl and mix well. Stir in salad ingredients. Raisins or grapes would be a fantastic addition.
