Achaar Masala Sausage

It's an easy way to make homemade sausage to use in your favorite pastas, soups, and casseroles. This recipe can be multiplied and frozen in smaller portions to keep on hand.

Method:

Mix together 1 pound ground pork, 4 generous teaspoons Achaar Masala, 2-3 cloves of garlic chopped, 1 teaspoon coarsely cracked fennel seeds, 1/2 teaspoon each salt and pepper, a few Tablespoons chopped fresh parsley, and 2 Tablespoons dry red wine or red wine vinegar.


Once thoroughly mixed, cover and place in the refrigerator overnight.


When ready to cook, place a few tablespoons of olive oil in a saute pan. Brown over medium-high heat until cooked through without drying out. While browning, use a spoon or spatula to break sausage into pieces.


Add to pasta, soup or a casserole.

This pasta is a simple olive oil and garlic sauce with some extra Achaar Masala to taste.

I also added it to an easy, comfort soup with chicken stock, onions, carrots, white beans, diced tomatoes, fresh thyme, and noodles.


The delicious possibilities are endless!
