These spicy potatoes are perfect as a samosa filling (shown below in a samosa chaat), chaat base, paratha filling, and much more!

Ingredients 3 medium russet potatoes
1/2 yellow small onion, diced
1/2 cup of green peas
2 tsp Pur Spices Achaar Masala
1/2 tsp cumin seeds
1 jalapeño or chili diced
1/2 tsp garam masala
1 tbsp ginger-garlic paste
Salt to taste
Fresh chopped mint
Fresh chopped cilantro
Roughly chop potatoes and boil them for 15-20 minutes or until softened. Crumble or gently mash and set aside.
Heat oil in a pan and add cumin seeds and onion. When they start to sizzle, add in ginger garlic paste and chili. Cook until fragrant for about a minute.
Add in the green peas and cook for another minute or two. Add in all the masalas and cook for another minute.
Add in the potatoes and season with some salt. Stir and cook for a few minutes until everything is mixed.
Add in fresh chopped mint and cilantro.
