With just the right amount of kick, these Kabab rolls can be made with a few key spices and onions and you have a wrap thats full of flavor!

Ingredients:
For Kabab
500g Chicken mince
1/4 cup Onion (fried)
4 tbsp Coriander leaves
2 tbsp Mint leaves
3-4 Green chilies
Salt, to taste
1/2 tsp Turmeric
1 tsp Garam Masala
1 tsp Cumin seeds (crushed & roasted)
1 tbsp Coriander seeds (crushed & roasted)
2 tsp Red chili flakes
1 tbsp Ginger
1 large Onion (shredded & squeezed)
4 tbsp Gram flour (roasted)
2 tbsp Ghee
Oil for greasing
3-4 tbsp Oil (for frying)
For the tawa paratha
1 cup Whole Wheat Flour
Oil , for kneading
Salt , to taste
Oil , to roast the parathas
Other ingredients
Onion rings as required
Original Harissa as required
Mayonnaise as required
Method:
Kabab
In a chopper add chicken mince, fried onion, coriander leaves, mint, green chilies, salt, garam masala, cumin seeds, coriander seeds, red chili flakes, ginger, turmeric and chop it well
Take out the chicken mixture in a bowl, add onion, gram flour and mix it well
Then add ghee in the mixture and mix it well again.
Take wooden skewer, grease it and your hands with oil
Thread mixture on to the skewer and make seekh kababs
Heat oil in a pan and fry seekh kababs on medium low flame until golden brown
Make a cup of aluminum foil, place it in dish, put hot coal in it, then add little amount of cooking oil on it and smoke your kebabs
Tawa Paratha
In a large bowl combine the flour, salt, a tablespoon of oil and knead adding little water at a time to make a firm and smooth dough
Add one tbs of oil to coat the dough and knead again - Cover and set aside for 15 minutes
Knead once again and divide the dough into 4 portions - Preheat the iron skillet on medium heat
Roll the dough portions into balls and flatten them with the palm of your hand. Toss them on flour and roll them out into circles of approximately 8 inches in diameter
Continue the same process of rolling with the remaining dough portions
With skillet on medium high heat, place a rolled out paratha on the skillet. After a few seconds flip on the other side
At this point flip the plain paratha and add some oil - Cook until almost done
Assembling:
️Take paratha, spread Original Harissa and some mayonnaise
Place one seekh kabab, add some onion slices and roll i️t
Serve with salad leaves, onion, tomatoes and cucumber
