Feta with Spicy Tomato and Chickpea Sauce over Spinach Spaghetti


  • 4 tsp olive oil

  • 7-8 cloves garlic, finely chopped

  • 28 oz can San Marzano tomatoes

  • 1 cup water

  • 1 tsp Original Harissa

  • 1 can chickpeas, drained

  • 1 block Feta cheese, sliced

  • 1 package spaghetti

  • 1 package fresh spinach


  • Preheat oven to 375 degrees.

  • In an oven-safe skillet, add olive oil and garlic.

  • Cook over medium heat for 1-2 minutes until garlic is cooked. Stir frequently to avoid burning.

  • Add tomatoes and water. Stir to combine. Let simmer 10-15 minutes.

  • Add chickpeas, Harissa, and salt and pepper to the sauce mixture.

  • Top with 5-6 slices of feta cheese.

  • Spoon sauce over each slice of feta then place in the oven.

  • Bake for 10 minutes or until feta warmed through.

  • While sauce is in the oven, cook 1 package of pasta.

  • In a separate pan, sauté one package of spinach with olive oil and fresh garlic.

  • Mix spinach mixture with cooked pasta.

  • Once the sauce is removed from the oven, ladle sauce over pasta mixture and top with feta pieces.
