Harissa Veggie Tart

The perfect snack with a crispy flakey crust, roasted veggies and lots of flavor!

Ingredients:

  • 1 puff pastry

  • Mixed vegetables of your choice cut into medium sized topping- zucchini, bell pepper, onion, sun-dried tomatoes/ fresh tomatoes

  • 2 tbsp original Harissa paste

  • Cheese of your choice- mozzarella/ricotta/ feta

  • 3 tbsp olive oil

  • Salt and pepper

Method

  • Preheat the oven to 400F

  • Lightly flour the surface and roll out the puff pastry to 1/8th inch thickness

  • Line a baking sheet with parchment paper and transfer the rolled puff pastry

  • Poke the puff pastry with a fork leaving about 2cm from the edge

  • Spread Harissa paste on the puff pastry and top it with vegetables and cheese. Sprinkle salt and pepper.

  • Bake the puff pastry for 20-30 min or till the pastry turns out golden brown
