Masala Roasted Cauliflower

This is a perfect side dish or can be added to a salad/grain bowl. You can also substitute any veggies or proteins that you prefer.


Ingredients

  • 1 head of cauliflower cut into bite size pieces

  • 6 tbs of PUR Spices masala paste

  • 2 tbs of tomato paste

  • 1 tbs of PUR Spices harissa (add more or less depending on desired heat level)

  • 1/2 red onion sliced

  • salt to taste

  • optional garnish: sunflower seeds, cashew pieces, cilantro, lime juice, pomegranate seeds


Method:

  • Preheat oven to 375F and line baking sheet with parchment paper.

  • Mix masala paste, tomato paste and harissa in bowl. Add salt if needed.

  • Toss in cauliflower and evenly coat all pieces with the masala mixture.

  • Spread red onion slices on prepped baking sheet.

  • Spread cauliflower mixture on onion slices.

  • Roast in oven for 35-45 min (toss halfway through) until cauliflower is cooked through and onions are starting to char.

  • Garnish with cilantro, a squirt of lime and sunflower seeds.

  • Serve immediately or at room temperature.
