Spicy Cauliflower Gyro

This vegetarian gyro features delicious cauliflower and spicy cilantro harissa to make a street food favorite!


Ingredients:

  • Pita

  • Spicy Cauliflower: ¼ head cauliflower, a few mushrooms, 2 tbsp @purspice Cilantro

  • Harissa, ¼ small onion chopped, ¼ green pepper chopped

  • 1 cup shredded cabbage, carrots, and romaine mixed with lime juice

  • Pickled onions & radishes (recipe for pickling on my stories)

  • 1 tbsp crumbled feta cheese

  • ½ cup hummus

  • ¼ cup chopped cucumber and tomatoes


Method:

  • In a pan, add 1 tbsp olive oil and cook the cauliflower for a few minutes. Mix in the onion, mushrooms, and green pepper.

  • Keep the flame on low heat and add some salt to taste and 2 tbsp of PUR cilantro harissa. Mix to combine and set aside.

  • Heat the pita up and spread some hummus on it. Then add the cauliflower mixture. Top with the rest of the ingredients and enjoy!
