Spicy Harissa Vinaigrette
The perfect dressing for our roasted rainbow carrot salad, or any salad!
Harissa to taste
1/4 c balsamic vinegar
1-2 tbs maple syrup (use more or less depending on personal preference)
1/4 c Extra virgin olive oil
Salt and pepper to taste
Mix or wisk dressing ingredients in a jar or bowl.
Roasted Rainbow Carrot Salad
Roasted Rainbow Salad:
Clean and cut rainbow carrots, and roast in 425 F oven with a little olive oil and salt/pepper until roasted.
Once carrots are done roasting, make a bed of spinach and top with feta, cranberries, sunflower seeds (add whatever else you may like), top with roasted carrots and Harissa vinaigrette
