Spicy Harissa Vinaigrette

The perfect dressing for our roasted rainbow carrot salad, or any salad!

Ingredients:

  • Harissa to taste

  • 1/4 c balsamic vinegar

  • 1-2 tbs maple syrup (use more or less depending on personal preference)

  • 1/4 c Extra virgin olive oil

  • Salt and pepper to taste

Method:

  • Mix or wisk dressing ingredients in a jar or bowl.

Roasted Rainbow Carrot Salad

Ingredients:

  • Rainbow carrots

  • Spinach

  • Feta

  • Cranberries

  • Sunflower seeds

  • Harissa Vinaigrette

Roasted Rainbow Salad:

  • Clean and cut rainbow carrots, and roast in 425 F oven with a little olive oil and salt/pepper until roasted.

  • Once carrots are done roasting, make a bed of spinach and top with feta, cranberries, sunflower seeds (add whatever else you may like), top with roasted carrots and Harissa vinaigrette
