Spring Khichdi

The perfect one-pot comfort food dish filled with nutritious lentils, veggies, and rice!

Prep:

  • Soak yellow mung dal for 3 hours or more

Ingredients:

  • 3/4 cup of washed and soaked yellow mung daal

  • 4 green onions chopped with the whites and greens separated

  • 1/2 zucchini chopped

  • 3/4 cup basmati rice rinsed thoroughly

  • 1 tbs oil

  • 1tsp cumin seeds

  • 2tsp Mirch Masala

  • 3 cups water

  • Salt

  • Handful of chopped cilantro

  • Limes/lemons for serving

Method:

  • Heat oil in large pot and add cumin seeds, once seeds are sputtering, add the white part of the green onion. zucchini and Mirch Masala - cook and stir for about 2-3 minutes

  • Stir in daal, rice, and water, add salt to taste

  • Bring to a boil and then reduce to low temp. Cover with a lid on a tilt, leaving a small vent for the steam

  • Cook for about 15-20 minutes until done, turn off the heat, and close lid completely allowing steam to finish cooking the dish

  • Before serving mix in the remaining green onions, cilantro, and a squirt of lime or lemon juice

Serve with yogurt or raita
