These are so DELICIOUS and so easy to put together! You can use whatever vegetables you have, and it’s a perfect way to clean out the fridge.
Yields: 3/4 Quesadillas
Ingredients:
1/2 Red Pepper, sliced
1/2 Green Pepper, sliced
1/2 Red Onion, sliced
1 C chopped Mushrooms
1 C Corn
6-8 Corn Tortillas
2 C Pepper
Jack Shredded Cheese
1 TSP Pur Spices Masala Paste
1 TBSP Shan Tandoori Masala
1 TSP Tomato Paste
Lime Juice
Cilantro
Method:
Heat up oil in a pan, add in the peppers and onions. Let cook for 3-4 minutes. Add in the mushrooms. Season with salt and pepper. Let everything brown, cooking for another 4-5 minutes.
Add in the corn, tandoori masala, tomato paste, masala paste, and mix. Cook for 1-2 minutes.
Add in lime juice and cilantro.
Heat up another pan and assemble quesadillas with tandoor veggies and cheese. Apply some oil to the tortillas and cook them until golden brown, then flip. About 2-3 minutes on each side over medium heat. Enjoy!
