Acorn Squash and Paneer Curry

Perfect for cold, winter nights - A mix of masala and curry paste along with some pantry staples, make this dish irresistible.


  • 1/2 cup Masala Paste

  • 1-2 tbs Red Curry paste

  • One cubed acorn squash

  • Oil of your choice

  • 1 can coconut milk

  • Soy sauce

  • Sugar

  • Salt

  • About 8-10oz of paneer cubed


  • Saute one cubed acorn squash in some oil

  • Once squash is mostly cooked, add in 1/2 cup masala paste and 1-2 tbs of red curry paste

  • Stir and then add 1 can of coconut milk

  • Add in soy sauce, sugar, and salt to taste

  • Simmer for about 5 minutes and add in cubes of paneer (feel free to sub out any protein of choice)

  • Continue simmering until squash is completely cooked and paneer is soft

We suggest serving with basmati rice and harissa!
