Acorn Squash and Paneer Curry
Perfect for cold, winter nights - A mix of masala and curry paste along with some pantry staples, make this dish irresistible.
1/2 cup Masala Paste
1-2 tbs Red Curry paste
One cubed acorn squash
Oil of your choice
1 can coconut milk
About 8-10oz of paneer cubed
Saute one cubed acorn squash in some oil
Once squash is mostly cooked, add in 1/2 cup masala paste and 1-2 tbs of red curry paste
Stir and then add 1 can of coconut milk
Add in soy sauce, sugar, and salt to taste
Simmer for about 5 minutes and add in cubes of paneer (feel free to sub out any protein of choice)
Continue simmering until squash is completely cooked and paneer is soft
We suggest serving with basmati rice and harissa!
