Masala Cilantro Rice
Simple, quick, & healthy!
1 tsp cumin
1 tsp mustard seed
1-2 tbsp vegetable oil
1 onion, diced
1 carrot, diced
4 tbsp Masala Paste
3 tbsp quick green chutney (recipe below)
Paneer, cubed & pan-fried (or protein of choice)
1 cup cooked Basmati rice
1 bunch of cilantro
1 bunch of mint
Add a handful of cilantro, mint, juice of half a lime & a sprinkle of salt to a food processor.
Blend until mixture is chopped and combined, but not liquid.
In saucepan over low heat, add vegetable oil, cumin, and mustard seed.
Combine and cook for 1 minute until seeds sputter.
Add vegetables and cook until softened.
Add Masala Paste and stir until combined.
Once combined, add 3 tbsp green chutney.
Combine paneer and cooked rice.
Lastly, toss ingredients together and your dish is complete!
