Masala Cilantro Rice

Simple, quick, & healthy!



Ingredients:

  • 1 tsp cumin

  • 1 tsp mustard seed

  • 1-2 tbsp vegetable oil

  • 1 onion, diced

  • 1 carrot, diced

  • 4 tbsp Masala Paste

  • 3 tbsp quick green chutney (recipe below)

  • Paneer, cubed & pan-fried (or protein of choice)

  • 1 cup cooked Basmati rice

Green Chutney:

  • 1 bunch of cilantro

  • 1 bunch of mint

  • 1 lime

Method:

  • Add a handful of cilantro, mint, juice of half a lime & a sprinkle of salt to a food processor.

  • Blend until mixture is chopped and combined, but not liquid.

Method:

  • In saucepan over low heat, add vegetable oil, cumin, and mustard seed.

  • Combine and cook for 1 minute until seeds sputter.

  • Add vegetables and cook until softened.

  • Add Masala Paste and stir until combined.

  • Once combined, add 3 tbsp green chutney.

  • Combine paneer and cooked rice.

  • Lastly, toss ingredients together and your dish is complete!
